Cabbage Salad
adapted from Green Smoothie Girl's 12 Steps to Whole Foods Complete Course (The complete 12 Steps to Whole Foods with Audio & Videos)
1/2 head red cabbage, shredded
1/2 head green cabbage, shredded
1 1/2 c grapes, halved
2 cans mandarin oranges
1 c pumpkin seeds
1/2 cup almonds, sliced
1/2 cup honey
1/2 c apple cider vinegar
1 c extra virgin olive oil
1 Tbsp mustard
1 tsp sea salt
1/2 small red onion
1 Tbsp poppy seeds
Combine first 6 ingredients as salad in a large bowl.
Dressing: In a blender or food processor, combine the next 6 ingredients. Blend well. Stir in poppy seeds.
Serve salad with dressing.
