I LOVE taco salad. And lentils are a perfect substitute for the meat in this dish. Here's my take on it. (Pic to come soon)
Meatless Taco Salad
3/4 cup lentils
2 cups water
1 packet of taco seasoning (or make your own)
1 head green leaf lettuce
1 cup cooked quinoa
2 cups shredded cheddar cheese
1 large tomato, diced
1 can of olives
1 bag tortilla chips
1 avocado, diced
Cook lentils: Bring 2 cups water to a boil. Add lentils. Once boiling, reduce heat to low. Simmer covered for 20 minutes.
Add taco seasoning to lentils and heat through.
Top lettuce with quinoa, lentils, and other toppings.
